Apple Cinnamon Oatmeal
Hi friends, today I wanted to share a delicious and decadent oatmeal recipe that has quickly become a breakfast staple in our house this fall. It’s hearty, wholesome, creamy and can be whipped up in about 15 minutes from start to finish. It’s the perfect quick breakfast for those chilly fall mornings. My boys squeal in excitement when I serve it up and I feel good about them eating it. I hope you enjoy it as much as we do!

1. Wash and dice four to five medium apples. I love to use Honeycrisps for this but you can absolutely use your favorite apple variety. I dice the apples on the larger side because we prefer a little bite left to the apple after cooking. Add the apples to a small stock pot or large sauce pan.
2. Peel and add a whole banana to the pot. There’s no need to slice or mash the banana, it will dissolve as the liquid heats and the oatmeal is stirred.

3. Add 1 teaspoon of cinnamon
4. Pour 2 1/2 cups of rolled oats over the apples
5. Add 5 cups liquid. I like to use half milk and half water. Adding milk gives it that extra creaminess and it’s just not the same without it. Stir mixture.
6. Cook over low to medium heat, stirring frequently to prevent the milk from burning on the bottom of the pan. Cook for about 10 minutes or until liquid is mostly absorbed and oats are tender. You can cook it longer if you prefer softer apples.
7. Remove from heat, add a splash of vanilla, 2 tablespoons pure maple syrup and honey to taste.
8. Portion into bowls. This recipe makes quite a bit. It generously serves two adults and two children.
9. Drizzle top of oatmeal with honey. If you want to make it extra decadent, drizzle with a few tablespoons of heavy cream. It’s worth it, I promise!
